  In a critical trial run, researchers were working anxiously into the midnight for trial results.

(1) First batch of yacon syrup was collected from low temperature evaporator.

(2) The syrup has a concentration above 65 brix but the color is still golden and translucent.

(3) Researcher is analyzing sample for saccharide profile, heavy metals, microbiology,

impurities and pesticide residue, if any.

  (4) Pure water generator.  Pure water is used in every step of the workflow.

Despite all our efforts put forth into researching the technical know-how of making good quality yacon syrup, the amount of economic benefits which the project can extend to the farmers is still in question.  We were relieved not until we witnessed farmers flooding in willingly to supply us with their harvest.  But why is that the case ?

to the storage area by carts.

 

Yacon is weighed and

farmers collect cash at the spot.

 

Technical design of the syrup processing has wide tolerance and is not picky on the yacon quality.

 

 

Farmers face dilemma when selling their yacon to the market, and every time it is a bet for them. Why ?

 

-         the bazaar is some 200 km from the village and individual farmer has to hire a truck when he or she wants to trade their harvest to the wholesale market and the delivery expenses cost a fortune. The bazaar is a free market and will only take yacon of the lowest price and the best quality. The market will not at all have sympathy for the farmers if their produce is anything less than the cheapest and the best quality. Because of market uncertainty and asymmetry of information, farmers are making a bet every time when they decide to hire a truck and depart from their village for the bazaar.  But if they have no luck on the endeavor, the whole year’s hard work and investment together with the delivery expenses will end up in the trash.

 

-         our syrup workshop has a design capable of processing yacon of all quality (of course, not including rotten ones). And yacon syrup processing acts as back-up and buffer for local farmers especially in bad years when the yacon market is flat and prices are low.
