Yacón Mount Camellia Song Ming

 

The place is called “Cha Shan” in Chinese, literally meaning Mount Camellia.

 

No one knows since when the place was called “Cha Shan” but villagers can tell this guest from the Andes came to Mount Camellia of Song Ming in 2004 and made it home ever since. The guest villagers refer to is Yacón, and Yacón now inhabited some 3,000 hectares of the land at Song Ming.

 

Mount Camellia is an unspoiled village in southwest of China, located on the Yun-Gui Plateau at an altitude of 2000 meter. Yacon originates from Andes Mountains in southern hemisphere. Mount Camellia is situated in the northern hemisphere but the land and climate has just the right terroir for Yacon and the village started Yacon cultivation in 2004. Before that, villagers make a humble living by growing conventional crops like rice, maize, peas and so on.

About the Project

 

Yacon, as a perishable, does not last.

 

How to safeguard a year’s hard work and turn their crop into cash is an issue for every farmer.

 

Thanks to technical sponsorship of Down-to-Earth Charity HK Ltd., Mount Camellia now possesses state-of-the-art facilities to produce their unique Yacon Syrup according to pharmaceutical standards.

 

Besides, Yacon Syrup, projects are underway to produce Yacon Tea with standardized phytochemical content, and Yacon Slices / Powder preserved by vacuum drying.

 

It is hoped that by doing a little something can improve the livelihood of the community.

Producing Yacón Syrup at Mount Camellia

 

- Our processing facilities are connected by pipeline system for production hygiene, and use 304 stainless steel for all vessels, pumps and pipeline in contact with the feedstock.

 

- Our extraction system makes adjustment of sugar profile possible.

 

- Evaporation and Concentration is carried out under vacuum at reduced temperature. This minimizes Maillard reaction or caramelization that cause browning in candy syrups.

 

- Impurities and undesired substances are selectively removed by filtration system.
